Avocado & Spinach Salad

Avocado & Spinach Salad with Pine Nuts — very tasty and healthy recipe, rich in necessary for the organism.


Ingredients: (4 servings)

  • young spinach leaves thoroughly washed, cut off from cuttings — 300 g
  • pine nuts, roasted in the oven — 100 g
  • Parmesan cheese, grated on a coarse grater — 100 g
  • ripe avocados — 2 pieces

For the sauce:

  • Dijon mustard — 2 tablespoons
  • sunflower oil — 50 ml
  • Olive oil — 50 ml
  • White balsamic vinegar — 50 ml
  • salt and pepper from the mill — to taste

Cooking :

(low complexity, cooking 20 minutes)

In a small bowl, mix the vinegar and mustard. Add sunflower oil and olive oil and whisk to whip the mass. Season with salt and pepper.

Sprinkle with young spinach sauce. Arrange them on plates or bowls. Sprinkle them with pine nuts and grated parmesan. Avocado cut into cubes or slices and spread out nicely around and on top of the salad.

This salad can be eaten as a separate dish, or with Rabbit in Cream Sauce
