Chocolate Nut Cake


This chocolate nut cake is baked without any flour. Very delicious and festive!

Recipe for 8 persons


Mascarpone can be replaced by any other cream cheese or even sour cream. Instead of brown sugar take 100 grams of regular sugar and 50 g of honey.


For glaze

  • dark chocolate100 g
  • liquid honey1 tbsp


For cream

  • Mascarpone — 400 g
  • oranges — 1 piece
  • powdered sugar — 50 g
  • Cognac — 1 tablespoon
  • cinnamon powder — 1 pinch


For the dough

  • Black chocolate — 300 g
  • eggs — 6 pieces
  • butter — 180 g
  • brown sugar — 150 g
  • almonds — 50 g
  • walnuts — 50 g
  • Hazelnut — 50 g
  • sea salt — 1 pinch



Oven preheated to 375° f.


Place in small saucepan 170 g butter 300 g sugar and broken into pieces and melt the chocolate all in a water bath. Almonds and walnuts grind in a blender toa fine Crumb. Separate the whites from the yolks. Whites with pinch of salt mix in elastic foam. The yolks whip. While whisking, enter the chocolate-cream and pour the chopped nuts. Then the parts mix with beaten egg whites.

A baking dish greased with remaining butter, turn dough out and send in the preheated oven for 25-30 minutes. If the cake is not ready, cover its baking paper and return to the oven for a further 5 7 minutes. Orange peel grate, squeeze the juice from it.

Cook the cream: combine zest with 2 tablespoons of orange juice, add the mascarpone, cinnamon, powdered sugar, pour the brandy and mix everything. Cooled chocolate cake cut lengthwise into two halves, one grease cream, cover with the second half.

Prepare glaze: 100 grams of chocolate melt in water bath, then add honey, stir,pour cake frosting and levelled a wide knife.

Hazelnuts slightly grind in a mortar and sprinkle the cake with all parties.
