Coffee makarons is a French dessert, in which refinement and simplicity merged togetherCoffee macaroon — great Eastern biscuits similar to our Almond Cake. This is a very tasty delicacy, perfectly combined with a cup of coffee.


Ingredients for 12 pieces:

  • 80 g egg protein aged 24 hours
  • 60 g of powdered sugar (1)
  • 180 g of powdered sugar (2)
  • 80 g almond flour
  • 10 g of wheat flour (if you use cocoa instead of food dye, it is necessary 20 g flour)
  • 10g cocoa powder
  • 2.1 h. L. soluble coffee


  • 100 g mascarpone
  • 50 g of dark chocolate
  • 1 h. L. soluble coffee



Sift powdered sugar (180 g) with almond flour and plain flour several times. Sift cocoa powder on top and add the instant coffee. If it is in the granules — the two spoons grind it into powder.

Whisk proteins with sugar (60 g) to stable peak. In proteins, sift dry ingredients. Mix with a spatula from top to bottom. Otsadit on parchment paper macaroon. Once tap the baking tray on the table (not much), that would remove the «tails» and make the surface smoother.

They let stand at room temperature for 30 minutes to 1 hour. Preheat the oven to 293 F. Bake the pasta for 10 minutes.


Melt chocolate in the microwave or in a water bath. Immediately add the coffee and stir until it has dissolved. Mix chocolate with mascarpone. From cooking bag or kornetika squeeze a little filling on one half macaroon.

Gently cover the second half and a little push, that would spread the filling over the surface. Be extremely careful, because the cookies are very fragile, one wrong move and they can crack.

Take in the refrigerator for 24 hours. Of course, they may have already been once, but macaroon are much tastier and more tender, if the day will stand in the refrigerator.
