Couscous Stuffed Peppers

 

Bright, fragrant and delicious couscous stuffed peppersgood idea for lunch ora light and healthy meal.

 

Recipe:

  • 5 peppers
  • 200 g couscous
  • salt and pepper
  • 1 tomato
  • 100 g feta cheese
  • 1 onion
  • 400 ml of hot water or broth
  • 2 tablespoons sour cream
  • 1 carrot
  • vegetable oil
  • parsley

 

Cooking:

Finely chop the onion. Grate carrots. From tomatoes to remove the skin, cut into cubes. In a frying pan or skillet heat some vegetable oil. Put the onion and carrot. Stir and FRY until the onions transparency. Put the tomatoes and FRY until the evaporation of the liquid. Evenly pour over Couscous. Pour hot water or broth, salt and pepper. Gently stir with a spatula and cover with lid. Bring to a boil. Saucepan off the heat and leave for approximately 5 minutes with the lid closed.
