Eggplant Appetizer

 

Eggplant very useful vegetables, from which you can cook lots of delicious dishes. Eggplant Appetizer is one of them.

Cooking — 40 minutes

Recipe for 2 persons:

  • Eggplant — 3 pieces
  • lemon — ½ pieces
  • cilantro — 1 bundle
  • garlic — 2 cloves
  • olive oil — 2 tbsp
  • coriander seeds — 1 tsp
  • black pepper freshly ground — 1 pinch
  • sea salt — 1 pinch

Cooking:

Oven preheated to 356° f.

Bake whole eggplants. Skin crack 20 minutes later 30, depending on the size ofan eggplant. From lemon halves to squeeze juice.

Cook refills: rub garlic on a fine grater, connect with coriander seeds pounded in a mortar, add salt, pepper, lemon juice and olive oil. Hot Eggplant Peel, pulp finely.Finely chop the cilantro.

Mix the Eggplant with dressing, sprinkle with cilantro. Serve warm or cold.

This salad can be eaten together with Beef skewers
