Today for you a recipe of one of the most favorite cakes in my family — Ginger Cake. I cook the ginger dessert for the past 15 years, exactly, only one ingredient in the cream has changed over time, but these changes only for the better.

Ingredients

Dough:

  • flour — 280 g + 100 g
  • sugar — 200 g
  • butter 100 g
  • Honey 2 tablespoons
  • eggs 2 pieces
  • baking soda — 1.5 teaspoon

Cooking:

Pour eggs, honey, sugar and butter, bring to a boil over low heat. Once the mixture boils, remove from heat, add soda and again bring to a boil (mixture will begin to increase in size, so look for a bowl). Remove the mixture from the heat and gradually mix with 280 g flour. To highlight the taste of baking soda, I’m adding nutmeg and natural vanilla, to taste. Leave the dough in a warm placeon 2:00.

The dough is kneaded until the point where it will no longer stick to the hands,but try not to lug too much flour to future cake not turned out to be too dry and friable eye. Divide the dough into 8 pieces. Roll out each piece of the desireddiameter and one to the oven when 395 F 57 minutes.

Cream:

  • Mascarpone 250 g
  • condensed milk — 380 g
In advance boil condensed milk during 23 hours (I advise not to buy ready-made boiled condensed milk because it would concede in taste that you cook yourself)Chilled mascarpone (by the way, you can substitute sour cream or cream version which I like because it adds acidity finished product) during 5 minutes to whip and gradually add all the condensed milkFluff ready to cream each cake, then sprinkle with crumbs, it obtained from scraps and let become room temperature.
