Italian cannoli — Sicilian traditional dessert of fried dough, who prepared the nuns from Palermo. First cannoli sold only during CarnivalBut tubes were incredibly tasty and very popular, and they began to prepare for the year. To remain crisp cannoli filled with stuffing them before the feeding tube inside or glazed with melted chocolate and sprinkle with chopped pistachios. In addition to the filling of candied fruit and chocolate add various syrups, liqueurs and wine «Marsala», and can be mixed with ricotta and mascarpone.


The dough (250 ml glass):

  • Article 1.5 flour (225 g)
  • 1 tablespoon Sahara
  • 1 tsp cinnamon (you can add a teaspoon of coffee, and cocoa powder)
  • a pinch of salt
  • 1 egg yolk + 1 protein
  • 50 g cold butter
  • 1/4 Art. wine «Marsala» (65 ml)
  • 1-2 tablespoons water
  • olive oil or peanut oil


  • 500 g ricotta
  • 250 g of powdered sugar
  • 50 g chocolate drops or chips
  • 50 g candied orange


In a bowl, mix the flour, sugar, salt and spices to taste. Butter cut into pieces and rub with flour mixture into crumbs. Add yolks, wine and knead a soft dough. If necessary, add cold water. The dough is rolled into a ball and put into the refrigerator for 1-2 hours. For the filling mix the grated rikkotu with powdered sugar and candied fruit, and also put into the refrigerator.

The dough is thin (1-2 mm) roll out on floured table and a knife to cut the pizza into squares 10×10 cm. Metal tubes, molds are required for the preparation of cannoli. If not, you can cut a thick album sheet into squares 10×10 cm, connected to the same size parchment, rolled into a tube with a diameter of 2.5-3 cm, and fix a stapler. The tubes are ready. In a saucepan, heat the vegetable oil. Dipped in oil for 2 tubes and fry until golden brown as well as firewood. Ready crispy rolls out onto a cloth and allow to cool slightly. Then gently remove with a cannoli form. The form can be reused. Before serving, fill the cannoli cream and garnish with a candied cherry dessert or half and sprinkle with powdered sugar.
