Indian fruit is jackfruit, which is very similar to breadfruit, grown in Thailand and other East Asian countries for centuries. It is believed that the name comes from the word Malaysian jackfruit chakka (Sanskrit language this word means«round«), or Portuguese word jaca. Jackfruit is shaped like the durian, and is one of the largest grown fruit, its weight can reach up to 40 kg.

Jackfruit Peel should be greenish — yellow and intact. To the touch it should be thick but not solid. When the fruit ripens, the Peel is pulled, becomes firm and publishes a subtle flavor. Too strong smell suggests that jackfruit is already urgent. To clean the fruit, cut it lengthwise and remove the SAP. Remove also the heart and push down on the rind, to separate parts of the fruit from each other. Cut out the flesh with a knife and then seeds. Jackfruit can be stored in the refrigerator no more than 35 days, and in the freezer for up to two months.



  • 1/2 cup finely chopped ripe jackfruit (fresh or frozen)
  • 2 eggs
  • 2/3 cup sugar (original recipe uses Brown Palm sugar, but you can use and regular)
  • 1/2 cup coconut milk
  • 1 cup whole wheat flour
  • 1/2 tsp soda
  • 1/4 teaspoon salt.
  • 1/4 TSP vanilla sugar or liquid vanilla essence


When cutting jackfruit hands do not become sticky, lubricate fingers and knifecooking oil. Clean the jackfruit from outer shell and cut the flesh into small pieces.

Preheat oven to 340 f. Grease with vegetable oil cookie cutters (cell) for the cupcakes. Put all the ingredients in one large bowl and mix well. Put resulting mass in a cell and Bake 1520 minutes until cooked until the surface does not become Golden. The cupcakes to cool and serve with tea or coffee.
