Mango Panna Cotta

 

It is no secret that the panna cotta is one of my favorite desserts. So you want to bring the summer, grab him by the edge, inhaled its sweet fragrance. Move to a tropical island where juicy mangoes dripping lips. This dessert is a very delicate with the scent of vanilla and mango, I’m sure you’ll love it.

 

Ingredients:

  • Cream (33%) — 350 ml
  • Milk — 250 ml
  • Lemon zest (a small piece)
  • Vanilla extract (or vanilla sugar) — 1 tsp
  • Sugar — 90 g
  • Gelatin — 10 g (≈3-4 teaspoons) *
  • Water — 50 ml
  • Mango — 1/2 pieces

For the sauce:

  • Mango 1/2 pieces
  • Powdered sugar — 2 tbsp

Cooking:

* I am using 7 grams of gelatin for a given amount of liquid, but gelatin can be of different quality, and you may need a little more. In any case, do not use it too much in dessert, it spoils the structure of panna cats, since it must be softer that something between jelly and thick cream.

In a small saucepan, mix the cream with the milk, add sugar, vanilla sugar or vanilla extract and a piece of lemon peel (a length of about 2 cm) and put on fire. Gelatin pour a small amount of warm water and leave to swell.

Half a mango peel, slice and chop in a blender. When the milk mixture begins to boil, remove the pan from the heat, remove the lemon zest and add the mango puree. Bring on the fire and boil for a few minutes.

Add a mixture of gelatin and mix until dissolved gelatin. Let the mixture cool slightly, then strain through a sieve to get rid of extra pieces of gelatin and a mango and make the texture more tender. Pour the panna cotta on the forms and put in the fridge for 3-4 hours to pour.

The remainder of the mango slice and chop with 2 tablespoons of powdered sugar. If the mango sauce structure was not sufficiently silky — wipe the puree through a sieve.

Panna Cotta can be fed into molds watering mango sauce. To get to the Panna cat form, simply lower the bottom of the form for a few seconds in hot water (so that the water does not burst in the form) and invert onto a plate, add the mango sauce, berries, mint slice and enjoy. Bon Appetit!
