I share with you a recipe other than Mussel salad, which, incidentally, and feast on the table won’t get lost. Usually the word «rich» in relation to salads I perceive as profanity, but this salad is rich in a good way: over the useful marine protein, beans, a bunch of fresh vegetables and herbs, spices — the salad itself can become quite a full lunch or dinner. And even if you don’t like mussels, sure, you like the idea about the sauce, thick and aromatic, which is quite possible to fill any other salad to your taste.

Ingredients for 2 servings:

  • 1 glass of boiled beans
  • 200 g mussels
  • 1 ripe avocado
  • 1 ripe tomato
  • 1/2 red onions
  • 1 spicy pepper
  • bunch cilantro
  • for filling:
  • 1 green pepper
  • 2 Tablespoons extra virgin olive oil
  • 1 tablespoon of lemon juice
  • 1 clove of garlic
  • 1/2 tsp coriander
  • 1/2 teaspoon paprika
  • Salt
  • black pepper

 

Cooking:

The longest lasting in this saladthaw mussels, and cook the beans and pepper. Problems with beans can be partially avoided by taking the finished beans at the Bank or at least beans «black eye«, which do not need to soak before cooking (but you still need to cookin this sense refer to the information on the packaging). As for peppers, then it must be baked in the oven at maximum temperature until the emergence of dark brown on each side, then 10 minutes put inpot with lid, where it cools slightly, then peel off the skins and seeds, leaving only the flesh.

When you do all of the above, remain downright trivia. Join pepper pulp in Blender with remaining ingredients, adding the same large portion of cilantro and punch before reception of homogeneous and thick sauce. It should be the consistency of liquid sour cream, and some time can be stored in the refrigerator, but before you fill a salad, you must again mix: oil and liquid components form an emulsion sauce and salad will only benefit from this.

Well, the salad bowl join defrosted mussels, cooled beans, chopped diced avocado pulp, tomato pulp, chopped into cubes, but also smaller (if not sure wintertomatoesthey can be replaced with Sun-dried tomatoes), thinly sliced red onion, finely chopped spicy pepper and remaining coriander. Fill the salad, as should shake the contents of the bowl with the sauce, put them on plates and immediately at the table!
