The world’s most popular pizza bears the name of Margarita: the simplest to prepare this pizza with mozzarella and Basil likes everyone, especially children. In Naples, the birthplace of pizza baking stone oven used, the temperature inside of which is much higher than in a conventional oven and Pizza Margarita is prepared just for a minute or two. At home such as pizza, of course, do not do, but that is no reason to deny yourself and your relatives and friends the pleasure to eat delicious pizza in the warm company.

Ingredients for 4 pizzas


for the dough:

  • 500 g flour
  • 320 g water
  • 1 tsp salt
  • 1/2 sachet of yeast


for the sauce:

  • 500 g tomatoes pureed
  • 3 cloves garlic
  • black pepper
  • 2 tsp dried oregano
  • Salt
  • 4 Tablespoons extra virgin olive oil


for the stuffing:

  • 250 g mozzarella cheese
  • few sprigs of young Basil



Build on a clean surface table «well« from the flour, pour in some water, add the dry yeast (just in case specify amount needed on the packaging) and stir into the water part of the flour to the condition of thick cream. Add the remainingwater and salt and start to shift the flour with the internal edges to the Middle,intensively stirring dough. Adding all the flour, stir vigorously, fold and knead the dough for about 10 minutes, until it becomes elastic and inelastic. Removethe dough in the bowl, cover with a towel and put in a warm place for 3040minutes to get it doubled in size. Again put the dough on the table, knock outall the air from it, form two neat ball and let them rest 1520 minutes in a warm place.


Cooking Sauce

Authentic pizza Margherita baked in a wood oven, the temperature inside reaches 450 degrees. But we have this, so put the oven to heat up to a temperature of 480 F, placing in a central part of oven pizza stone or inverted baking sheet. When the oven is hot, place it in the upper mode grill to maximum. Until the dough is recruited by force, and the oven is warming up, it’s time to do the Pizza Margarita a sauce. Chop the garlic and fry it in olive oil a minute or two, then add to skillet tomato pulp and dried oregano. Simmer the sauce over medium heat for 20 minutes, stirring from time to time, then season with salt, freshly ground black pepper and, if desired, a pinch of sugar for more expressive taste.

Top put thinly sliced or torn to pieces mozzarella (I recommend using a cheese in brine, not firm mozzarella for pizza). Open the oven, carefully transfer the Margarita on a hot stone or a baking pan and Bake until the dough is flush and the cheese melts completely (in my oven it took about 7 minutes). Remove the pizza, sprinkle on top of leaves of basil, sprinkle with olive oil and serve it by repeating the same manipulations with the remaining dough, sauce and cheese.
