Roasted Tomato Soup

 

Tomato soup has many options for cooking, flavours. But the main feature which has any tomato soup, it is bright, the predominant flavor of tomatoes.

 

Ingredients for 5 servings:

  • Fresh thyme — 3 g
  • Olive oil (for tomatoes) 15 g
  • Red Onion — 160 g
  • Fresh garlic 20 g
  • Olive oil (for frying) 10 g
  • Balsamic vinegar 15 g
  • Tomatoes fresh 450 g
  • Sugar cane25 g
  • Vegetable broth or water — 300 g
  • Black pepper freshly ground salt — to taste
  • Pelatipeeled tomatoes in own juice 850 g
  • Feta cheese — 200 g
  • Fresh basil to taste

 

Cooking:

Wash the tomatoes, remove the stalk attachment point. Cut in half, cut up put in a baking dish. Sprinkle with salt, pepper, thyme, and drizzle with olive oil. Bake at 395 F for 15 minutes.

Jump cut red onion, FRY in olive oil until soft. Add the crushed garlic cloves, put out another 3 4 minutes, add the sugar, vinegar and caramelize. Pour in the vegetable broth or water. Boil tomatoes pelati, add stewed tomatoes.

Simmer on very low heat for 1:00. Beat in a blender at the lowest speed (to preserve red), rub through a sieve. Warm up the soup to the boil, pour plates, garnish with diced feta cheese and basil leaves. Drizzle with olive oil.

This soup is very tasty eaten with toast, or with Vegetable Tartlets
