Salt and sugar will help you for pickling red fish; herbs, lemon peel and pepper isto emphasize and strengthen delicate fish taste.

Recipe for 8 servings:

  • Two pieces of salmon on 200 g, without skin and bones
  • 1 tablespoon (heaping) salt large grinding
  • 1 tablespoon (heaping) sugar
  • Zest of half a lemon
  • 1/2 teaspoon black pepper or white pepper
  • 1 tablespoon finely minced dill

Cooking:

Pre mix salt with sugar, lemon zest, pepper and dill. On plastic wrap, put a piece of salmon (party, where it was hidden, down). Evenly spread the resulting mixture over fillets with salt and cover with the top second piece of fish (the side where theskin must be on top).

Tip:

For larger pieces take salt and sugar at the rate of 1 tablespoon of both (with slide) for every 400 g of fish. Blend in a blender to make pickling, throwing all the ingredients.
