Scallops and shrimp ravioli

Scallops and shrimp ravioli turn out incredibly juicy and fragrant, creamy sauce goes perfectly with them. Prepare these delicious ravioli for lunch, and your home will be delighted.

Serves 2 (22 pieces)

Dough:

  • Flour — 300 g
  • The eggs (yolks only) — 6 pieces
  • Salt
  • Olive oil — 1 tbsp
  • Egg (also only the yolk) — 1 unit for lubrication

Filling:

  • Scallop — 3 Piece
  • Tiger prawns — 3 Piece
  • Butter — 50 g
  • Garlic — 1 clove
  • Salt
  • Parsley — 1 tablespoon

Sauce:

  • Butter — 50 g
  • Flour — 1 tbsp
  • Cream 10% — 50 g
  • Dry white wine — 50 g
  • Parsley — 1 tablespoon
  • Grated parmesan cheese — 50 g

Cooking:

Sift flour and pour a mound, make a well. Beat the yolks with a fork 1 tablespoon water and 1 tablespoon of olive oil, salt. Pour the egg yolks into the flour and knead the dough. Knead ideally about 15 minutes, the dough was uniform. I do not get mixed up all the flour at once, leaving 50 grams and adds them to the process. The dough is rolled into a ball, wrap with foil and place in refrigerator for an hour.

For the filling, finely chopped shrimp and scallops. Mix a little melted butter with parsley and crushed garlic and add this mixture in seafood, salt, mix well.

The dough is divided in two thin-layer thin. On one half of the expanded reservoir filling, at a distance of 2 cm. Around the dough to grease yolk filling and cover with the other half. Press down around the filling and cut the ravioli with a special knife or form. Cook ravioli in boiling salted water for 7 minutes, remove with a slotted spoon and immediately shift to the sauce.

While the cooked ravioli, we are preparing the sauce. Melt in a pan of butter, add flour, stir, chtoy no lumps. Add the wine, to evaporate it in half, add cream, parsley and salt, stir and simmer until thickened (2-3 minutes). Gently shift ravioli in sauce, stir quite akkkuratno and serve immediately.

When serving sprinkle with grated parmesan.
