A similar Sharp Vegetable Snack can be found throughout the MediterraneanI guess I’m not much mistaken, assuming that the cause is in the phenomenaltaste of Eggplant that fried that stewed that baked. In the season of them can cook every day, never repeating themselves, and in the winter it may be a goodway to think about summer. The proposed Starter fits that at any time of the year, because you can serve it hot, and cold.

Ingredients for 4 servings:

  • 3 Eggplant
  • 2 sweet peppers
  • 1 onion
  • 1 carrot
  • 400 g tomatoes in own juice (or 600 g ripe tomatoes)
  • 23 cloves of garlic
  • 12 sharp green peppers
  • big bunch cilantro, parsley, Basil and dill
  • vegetable oil
  • 1 teaspoon coriander
  • Salt
  • black pepper

 

Cooking:

Cut the Eggplant into small cubes of medium size, rub on all sides with salt and leave to soak for half an hour. During this time you just have time to chop the onion into half rings or feathers, carrot, pepper, julienne strips notlong largerand tomatoes to get rid of skin (like to peel the tomatoes) and chop finely. As finished, rinse the eggplants under running water to get rid of the salt, and dry.

This appetizer was very tasty and by itself, but can become a wonderful addition to Creamy Sauce Chicken
